This skin-contact white from Emilia-Romagna's hills shows a deep amber color and an intriguing nose of dried apricot, beeswax, and toasted hazelnuts. The palate is textural yet vibrant, with 3 weeks of maceration imparting flavors of quince paste, chamomile, and a distinctive almond bitterness that earned 90 points. Fermented spontaneously in concrete and aged in acacia wood, it finishes with spicy persistence. An adventurous orange wine that pairs wonderfully with rich pork dishes or aged Parmigiano-Reggiano - serve slightly chilled to appreciate its full complexity.
