Chateau Saint-Paul Haut-Medoc '21

This youthful Haut-Médoc offers intense aromas of blackberry, violet, and pencil lead with underlying notes of vanilla and toast. The palate is concentrated yet fresh, with fine-grained tannins and lively acidity carrying flavors of dark cherry, licorice, and a touch of mocha that earned 91 points. While approachable now, its structure suggests 5-7 years of positive development. A superb value from the excellent 2021 vintage that pairs wonderfully with grilled steak or braised short ribs.
