Whole-cluster pressing and concrete egg fermentation create captivating texture while maintaining razor-sharp acidity. Flavors of green almond, white peach, and pronounced saline minerality earned 93 points for crystalline purity. The finish lingers with lemon verbena, making it exceptional with crudo or grilled octopus.
