A crisp and fresh red wine, the expression of a Languedoc wine combining fruit and scrubland. Grenache aged in Amphora. Carignan in whole bunch and carbonic maceration. Indigenous yeasts. Vinification without additives. Pair with cheese, charcuterie, tapas, or as an aperitif. Winemaker’s Note: Located 20 km from Montpellier and close to Saint-Guilhem-le-Désert, the village of Argelliers is halfway between Le Pic Saint Loup and Larzac. Pierre took over the vines step by step from his uncle, who was traditionally a cooperative member. In 2017, with Samuel, they decided to create the Clos Constantin winery. Fifteen hectares are divided into small plots in two localities, Font-Belette and Les Champs de Traversiers. The domain is in organic agriculture and biodynamic conversion. In the cellar the vinifications are meticulous; Whites in direct pressing or maceration; The reds are vatted in whole clusters or destemmed. Fermentations are carried out with native yeasts from the cellar and the grapes. Once completed, the aging on the lees will last between 6 and 24 months in vats (stainless steel, concrete, wood) depending on the vintages and the balance. Pierre and Samuel produce wines in AOC Languedoc and Terrasses du Larzac. The wines are airy, full of finesse and without artifice. Winemakers: Pierre Halley and Samuel Durand
